Gluten Free Flourless Chocolate Cake Recipe

This flourless chocolate cake recipe is a great addition to anyone’s baking recipe box, but it’s especially great for those who have gluten intolerances and allergies.

The whole idea of baking a cake without flour seems kind of out there, so you might wonder where this idea even came from.

This rich chocolaty dessert was actually devised by a chef who wanted to create a gluten free menu years ago before gluten intolerances were even widely known about.

When the chef discovered that some of his restaurant visitors didn’t react well to overly floured cakes and other recipes, he started cutting back on the amount of flour he used.

Cutting out flour little by little seemed to help, but then he thought, “Why not create recipes with no flour in them at all?” So, he set out to do just that.

Instead of just changing around some ingredients in other cake recipes, he was totally switching up a recipe to create something completely new and unique.

He really didn’t know where to begin, except that he knew if he could get the eggs and sugar to work right, he’d be in business.

After many trials and failures, this is exactly what he did. Today’s basic flourless chocolate cake recipe is built on the fact that you can stabilize egg proteins into a cake like texture if you add them to warm-ish solutions.

You can’t add them to hot melted chocolate, or they’ll start to cook and get clumped up. Your texture has to be just right, but once it is, you’ll have the perfect cake for those with gluten allergies and those who just enjoy rich, chocolaty desserts in general.
